Hibana by Koki is the only Japanese restaurant in Vietnam awarded a Michelin star for its unique Teppanyaki style, which cook with cast iron, steel, or other metals—typically grilling, stir-frying, or deep-frying. Guests are cosseted from arrival to departure for a theatrical experience at a 14-seat counter in the basement of Capella hotel. Affable Chef Hiroshi Yamaguchi skilfully and precisely cooks teppanyaki dishes rich in complex flavor. The menu features a distinctly decadent edge, epitomized by the premium ingredients flown in twice weekly from Japan, such as abalone, spiny lobster, sea urchin, Yaeyama Kyori beef, and Hokkaido hairy crab.
Chef Hiroshi Yamaguchi is a passionate and highly skilled culinary expert, known for crafting a unique symphony of flavors that embodies the four seasons: Spring, Summer, Fall, and Winter. He uses only the freshest ingredients from Japan to create each dish. At Hibana by Koki, diners can watch the cooking process unfold in an open kitchen, while the chef explains the ingredients used, allowing guests to enjoy each dish hot and freshly prepared right before their eyes.
